It’s starting to warm up here in Dallas, but I have my fingers crossed for at least one last cold front before spring fully sets in.  Like many of you, my favorite dish to enjoy on a cold afternoon is a classic bowl of chili. My mom used to always make it when we were snowed in from a blizzard, so this has become a favorite comfort food for me. It takes a little bit of time to make, but it freezes well so you can easily make extras and bring it out on that unexpected chilly day or when you didn’t have time to whip up anything for dinner!

So that’s exactly what I’ve done! I spent the weekend making my favorite chili recipe, probably eating more than my fair share 😱, and freezing the rest for upcoming meals or when I need a little comfort food pick me up on a colder day!

I will admit, I have high expectations when it comes to this classic dish…mainly because every ski lodge has the best dang chili in the world , so I’ve been spoiled with some amazing chili in my day. But I’ll tell ya what! This recipe gives any ski lodge a run for its money! It’s hearty and delicious but still tastes light and healthy!

I love red velvet everything, so I’m always looking for an excuse to make this classic treat. Red velvet is particularly popular around the holidays, so with Valentine’s Day right around the corner, I knew I had to get creative and find a way to incorporate it into my Valentine’s brunch menu! So without further ado, I present to you, Red Velvet Waffles with a Cream Cheese Glaze!

These Red Velvet Waffles are absolutely delicious and are the perfect breakfast twist on a traditional dessert! They are so rich and fluffy, and the light cream cheese glaze pairs beautifully!

Between the Super Bowl on Sunday and Mardi Gras on Tuesday, we are in for a whirlwind of fun this weekend! I have to admit though, I have been so focused on preparing for the Broncos game 🙂 that my Mardi Gras party and decor has taken a little bit of a backseat.
