Buffalo Chicken Nachos

Nachos are one of my all-time favorite football foods! Most everyone who has watched a football game or been to a party (or lived at all, am I right?!) has munched on a classic chips-and-cheese nacho dish. This is an expected snack to serve at game watching parties, but what truly leaves a mark on your guests is when you can take these traditional dishes and put a unique spin on them and really make them yours! This will always leave an impression on your guests and these are the dishes that will stand out in people’s minds long after the party.

That’s what I love most about these buffalo chicken nachos. This isn’t your classic bar food snack. The buffalo chicken combined with the spicy ranch queso creates an absolutely delicious southwestern flair to your nachos that is always a crowd pleaser! Seriously, I dare you to put these down on the table and walk away…they will be gone within five minutes, so be sure to make extra queso so you can keep reloading! 

Buffalo Chicken Nachos Tailgate Party

Ingredients
  1. ½ bag of Tortilla Chips
For the Buffalo Chicken
  1. 2 chicken breasts, poached
  2. 1 ½ cup Sweet Baby Ray’s Buffalo Sauce
  3. 2 tsp powdered ranch dressing
For the Queso
  1. 1 Cup Heavy Cream
  2. 8 oz Pepper Jack Cheese, shredded
  3. 1 lb White American Cheese, shredded
  4. 2 tbs Powdered Ranch Dressing
Toppings
  1. Sliced Jalapeños
  2. 2 Green Onions, sliced
  3. ¼ Cup Blue Cheese Crumbles
  4. 2 tbs Sweet Baby Ray’s Buffalo Sauce
  5. 1 cup Shredded Lettuce
Instructions
  1. Preheat the oven to 400 degrees F
  2. In a medium size bowl, mix the shredded poached chicken, buffalo sauce and powdered ranch dressing.
  3. In a large saucepan, heat the heavy cream to a simmer. Add half of the pepper jack cheese and stir until fully melted and combined. Add the second half of the pepper jack cheese and stir until melted. Repeat with the american cheese. Once all the cheese is melted and and combined, stir in the powdered ranch dressing.
  4. Put a layer of the tortilla chips on the bottom of a cast iron skillet and top with half of the buffalo chicken mixture. Drizzle about a third of the queso on top, being sure to coat all chips.
  5. Add a second layer of tortilla chips and top with the remaining buffalo chicken and a third of the queso.
  6. Top with jalapeños, green onions, and blue cheese and drizzle with 2 tbs of buffalo sauce.
  7. Place the nachos in the oven for 3 minutes. Remove from the oven, top with shredded lettuce and serve!
