How to Create a Mediterranean Style Antipasto Platter

View More: http://cottonwoodroadphotography.pass.us/theeverydayhostess

When it comes to hosting a dinner party, I’m pretty sure there is nothing better than starting the evening off with a giant antipasto platter to kick the night off! I mean what is more welcoming than providing an abundant platter of delicious bites for your friends and family to gather around and enjoy while waiting for dinner? It immediately creates an intimate and relaxed atmosphere plus it buys you a few extra minutes to finish preparing the rest of the meal or beverages!

I absolutely love filling my antipasto platter with only the freshest of Mediterranean style ingredients that are just as beautiful as they are delicious! And the best part of this course is that it is simple and quick to throw together! Most of the ingredients can be store-bought, so all you need to do is arrange it on the platter, cover and refrigerate, and then bring it out when your first guest arrives! Easy peasy!

So we know this is super easy to throw together, but let’s talk about what we should actually include on the platter!

Keep it simple and colorful and offer a large variety of sliced meats, cheeses, and marinated vegetables. Some of my favorite additions to a Mediterranean style platter are:

  • Marinated artichokes
  • Hummus
  • Roasted red bell peppers
  • Sun-dried tomatoes
  • Marinated feta cheese
  • Marinated olives
  • Sweet Pickles
  • Roasted almonds
  • Dried fruit
  • Fresh Mozzarella
  • Roasted vegetables
  • Assorted deli meats (salami, turkey, prosciutto)
  • Tabouli

Oh and don’t forget the most important part! A large selection of pita breads, breadsticks, and crackers for dipping! YUM!

Antipasto platters are the perfect way to get people mingling and the conversation rolling. Incorporate one into your next dinner party or gathering and I promise you will not be disappointed!

Roasted Red Pepper Hummus

Hummus is an absolute staple in my household! I mean, I literally LOVE it!  I am always sampling different types in the store, so I finally started experimenting with it in my own kitchen. And let me tell you – it is way better homemade and even easier to make than you would expect! Keep Reading!

Lemon Caprese Chicken and Avocado Chopped Salad

02.07.16-24

I don’t know about you all, but I could eat caprese all day every day. I love caprese sandwiches, pizzas, salads, and if there was a way to incorporate it into a dessert, I’d probably have it on the table tonight (but seriously, if you know of a caprese dessert, please let me know)!

I just cannot get enough of this delicious fresh mozzarella, basil and tomato blend. My mouth is starting to water just thinking about it now!

Since this is clearly a staple in my household, I’m always looking for new ways to put a twist on a traditional caprese salad. With that, I present to you my new all-time favorite dish: Lemon Caprese Chicken and Avocado Chopped Salad! Sounds incredible doesn’t it? I assure you it is. It’s fresh and light, yet still filling and incredibly decadent. This versatile salad is just perfect for all your formal summer soirees or casual family dinners! Everyone is sure to enjoy!

PS! This homemade balsamic vinaigrette dressing, is definitely something to write home about! So do yourself a favor and double the recipe, so you have more for other salads later in the week! Keep Reading!

Jalapeño Cornbread Muffins

02.07.16-7

These Jalapeño Cornbread Muffins are the perfect side dish to your favorite entree. I recently made these as part of our Chili Bar party and have been munching’ on the leftovers for days! I have gotten so addicted, plus they are just so easy to throw in a Ziploc and add to your lunches, so I may have to make an extra batch here pretty soon!

Cranberry Maple Brussels Sprouts

Cranberry and Walnut Maple Brussel Sprouts

Brussels sprouts have gotten a bad rap in this world somehow. I don’t know if it is because Danny Tanner hated them, so all of us growing up in the Full House era refused to eat them or what the deal is because let me tell you – they are dang good!

I finally got over my fear of Brussels sprouts within the past year or so, and I can’t get enough of them! I literally want them for dinner every single night, and if I am at a restaurant and they have a special side of them, you can bet that I am amending my order to get those! Keep Reading!

Buffalo Chicken Nachos

Buffalo Chicken Nachos

Nachos are one of my all-time favorite football foods! Most everyone who has watched a football game or been to a party (or lived at all, am I right?!) has munched on a classic chips-and-cheese nacho dish. This is an expected snack to serve at game watching parties, but what truly leaves a mark on your guests is when you can take these traditional dishes and put a unique spin on them and really make them yours! This will always leave an impression on your guests and these are the dishes that will stand out in people’s minds long after the party.

That’s what I love most about these buffalo chicken nachos. This isn’t your classic bar food snack. The buffalo chicken combined with the spicy ranch queso creates an absolutely delicious southwestern flair to your nachos that is always a crowd pleaser! Seriously, I dare you to put these down on the table and walk away…they will be gone within five minutes, so be sure to make extra queso so you can keep reloading!  Keep Reading!

Pine Nut and Parmesan Roasted Asparagus

This asparagus recipe is one of my main go-to’s for dinner guests. It is SO easy and looks very decadent. It has the perfect amount of olive oil (yummmm I just cannot get enough) and roasted pine nuts with the melted Parmesan….oh goodness, y’all! This is tasty! And healthy because it is a vegetable too right?! This dish is perfect for your last minute dinner guest and it looks like you invested way more time into it…no one has to know this took 15 minutes max including cooking time, do they?!

Cheddar Cheese Mashed Potatoes

Mashed potatoes have always been one of my favorite comfort foods and side items to any meal, especially in the fall and around the holidays. No holiday dinner is quite complete without this traditional and delicious dish.

Cheddar Cheese Mashed Potatoes

Growing up, we had our Thanksgiving and Christmas dinners with my mom’s side of the family in Colorado. We all live within a couple of miles of each other, so travel is easy to say the least. Plus my cousins and I are all relatively close in age, so holidays are always a blast! Each family contributes something a little different each year to the feast, but my Uncle is always in charge of making the mashed potatoes. His mashed potatoes are the absolute most delicious potatoes I have ever had in my life. I’m pretty sure that if he decided to take a year off, we would all boycott the whole holiday! They are just that good!

I recently had a casual dinner party with my boyfriend’s family and decided that mashed potatoes would be the perfect addition to the meal. I was serving a brown sugar and Dijon mustard glazed salmon and pine nut and Parmesan roasted asparagus, so I thought these mashed potatoes would pair perfectly. My Uncle’s recipe has never been completely revealed, so I have been experimenting a lot trying to get the mashed potatoes just perfect! One thing I know is that he uses russet potatoes, but as I have been exploring different recipes, so many people recommend the red potatoes. You can make this recipe with either russet or red potatoes, but I have to say, after making this recipe quite a few times now just this week, I stand behind the russet potatoes!  Keep Reading!
