As much as I love my smoked salmon and eggs benedict, sometimes you just need to break out a classic and traditional quiche for your brunch party! Quiche is the perfect addition to any breakfast or brunch because you can easily adapt it to the size of your party and change up the ingredients to suit the tastes of your guests! Plus, you can make it the night before, so all you have to do is reheat it in the morning for a hassle free meal.

Quiches save really well, so I love making a variety of quiches on the weekends for a fun Sunday morning brunch with friends or even just for a party of two and keeping the extras for an easy go to breakfast throughout the rest of the workweek!

You can easily change up the vegetable and meat additions to create a variety of different quiche combinations. My personal favorite combinations are bacon (because who doesn’t love bacon?!), red and green bell peppers, and spinach, but feel free to get as creative as you want! 

Some other popular quiche ingredients include: ham, mushrooms, asparagus, onion, tomatoes, green onions, zucchini, and even potatoes!

I absolutely love this quiche recipe and would eat it for breakfast, lunch and dinner if I could! This quiche is perfectly cheesy and creamy and will absolutely leave everyone wanting more! Plus, if this ends up being leftovers for breakfast on Monday, your day will start just a little bit brighter!

Cheesy Bacon and Spinach Quiche

Ingredients
  1. 1 (9 inch) frozen pie crust, prepared according to instructions
  2. 5 pieces of bacon, crispy
  3. 10 oz. frozen spinach
  4. 2 tsp of olive oil
  5. 1/2 cup of onion
  6. 1/2 cup of green bell peppers
  7. 1/2 cup of red bell peppers
  8. 1 tsp minced garlic
  9. 4 large eggs
  10. 1 cup of half and half
  11. 1/3 cup of parmesan cheese, grated
  12. 1/2 cup of cheddar cheese, grated
  13. 1/2 cup of mozzarella cheese, grated
  14. 1 tsp of salt
  15. 1 tsp of pepper
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Thaw the spinach in the microwave and drain. Be sure to squeeze out any water, so that your quiche isn't soggy!
  3. Sautée the onion, bell peppers, and garlic on medium to high heat until tender, about 6 minutes.
  4. In a medium size bowl, whisk the eggs, half and half, and parmesan cheese together until combined.
  5. Spread the spinach and sautéed vegetables on the pie crust.
  6. Top the vegetable mixture with the crispy bacon and shredded cheeses.
  7. Pour the egg mixture on top and sprinkle with salt and pepper.
  8. Bake for 45 - 60 minutes or until the quiche is golden brown on top and the center does not jiggle.
  9. Allow to cool and serve!
