I am sure this will come as no shock to all of you, but one of my favorite parts of the holidays is all of the festive parties. I love that every Friday and Saturday night in December is filled with fun holiday extravaganzas. Whether it is a friend’s tacky Christmas sweater party or your corporate soireé, it is always so much fun to get dressed up and party hop between all of the different get togethers to see all of your friends and family.

Cranberry Brie Bites

With all of these events, I never want to arrive empty-handed, so I am always looking for new and festive recipes to bring that are quick and easy to prepare. These delicious Cranberry Brie Tarts fit the bill perfectly! They take a maximum of 15 minutes to prepare, yet look like you have spent all afternoon carefully crafting each one. The convenience doesn’t stop there! Besides being the simplest recipe ever to make, they are the perfect cocktail party grab-and-go appetizer. You can easily throw it on a napkin and don’t have to go through the balancing act of holding a plate in one hand and a cocktail in another! We all know what that’s like and it’s always a bonus when we can avoid it 🙂

Cranberry Brie Tarts

Ingredients
  1. 1 can (11 oz) Pillsbury® refrigerated puff pastry
  2. 8 oz Brie, rind removed
  3. 1 cup whole berry cranberry sauce
  4. ½ cup chopped pecans
Instructions
  1. Preheat the oven to 375°F. Spray a mini muffin tin with nonstick cooking spray.
  2. Remove the pastry dough and roll out using your hands. With a sharp knife or pizza cutter, cut the sheets into approximately 2” squares. Press each square into the bottom of each muffin tin.
  3. Cut the cheese into 42 pieces - about a ¾” cube for each.
  4. Place one piece of cheese into the puff pastry filled muffin tin.
  5. Top each pastry with about 1 tsp of cranberry sauce.
  6. Bake for 7-10 minutes, or until the edges of the pastry are lightly browned.
  7. Remove from the oven and allow the pastries to sit in the muffin tin for about 3 minutes.
  8. Sprinkle with chopped pecans.
  9. Pop the pastries out of the muffin tin. If they do not easily pop out on their own, use a butter knife to glide around the edges.
  10. Serve the bites warm and enjoy!
